We Can’t Get Over How Delicious This Recipe Is (And EASY Too).
Fajitas have a soft spot in my heart. The night my husband proposed we decided to stray away from our usual date night destinations (typically a pizza or burger joint) and try the new Mexican restaurant that just opened not too far from my apartment.
It was a beautiful place! After we were seated we began perusing the menu, trying to decide what to eat. Neither my husband nor I had eaten much authentic Mexican food before so we’re a little stumped on what to get. So when our waiter came back to check on us we both decided to go with that evening’s special: fajitas.
They came out piping hot and were so delicious. As we started chowing down I could sense something was a little off with my then boyfriend. He seemed preoccupied and agitated. I kept asking him what was wrong and he’d just shake his head. Until, finally, he finally spat out “I can’t wait anymore!” He then dropped down on one knee and proposed!
I was so shocked but immediately said yes to a round of applause from everyone at the restaurant. So, while in all our excitement we didn’t finish our fajitas that night, I soon began to associate them with that moment.

Quick tip: The fajita chicken and veggies are also great served over a bowl of rice drizzled with taco sauce.
