If You Haven’t Tried This Recipe You’re Missing Out
I can clearly remember the first time my mother made this recipe for our family. The holidays were just around the corner and she was in her full blown bake enough treats to feed a small army mode—up to her ears in butter, sugar and flour! She was one heck of a baker but making candy at home was always a challenge.
Yet year after year she would try her hand at a new candy recipe. This year in particular she was dead set on making old fashioned hard toffee. I can’t remember how many batches she made that ended up in the trash—some were so hard they were sure to break a tooth and others just never wanted to set up and remained a gooey, sugary blob.
Finally, unable to justify tossing out anymore butter or sugar she decided to search for an easier toffee recipe that was sure to turn out. And, lucky for all of us, she found a recipe that I think we all agreed was even better than the crunchy, sticky toffee she was originally going to make—and a whole lot less stressful, too!
Ever since that year this treat has been a staple in my family around the holidays. It’s that delicious!

Quick tip: To speed up the cooling process pop the pan in the freezer for 15-20 minutes—just be sure to check it and pull it out when it’s just set so you can still break it into pieces.
