I feel that there are two types of people when it comes to cookies: the crisp cookie lovers and the soft and chewy cookie lovers. I’ve baked for both before and have to say that I’m firmly in the soft and chewy cookie camp—no crunchy cookies for me! If I have to dip it in milk just to bite into it I have no interest.
That’s why I was on the hunt for a new cookie recipe. I had been making the same one for years after my grandma shared it with me. They were the absolute perfect recipe to eat right out of the oven or the same day you made them but by day two they weren’t the same… they’d get hard and need a tall glass of milk or a few seconds in the microwave to regain their deliciousness.
But one day when discussing my cookies woes with a fellow soft and chewy cookie lover she mentioned that she’d heard of a recipe that made cookies that stayed soft for days after baking—no special storage required. So of course I had to try them!
