 Sometimes, a Little Bacon is All You Need

When it is too hot to do much cooking, my thoughts turn to sandwiches. They are quick, easy and can be a very healthy choice, depending on their composition.

Another very valuable feature of sandwiches, especially if you have any picky eaters in your household, is that they can easily be tailored to the specific preferences of each family member, without you having to cook an entirely separate meal for each person. Oh, did I forget to mention that each person usually can make their own and that clean-up is easier than making them in the first place?

I don’t know how things are in your family, but around here, the BLT sandwich reigns supreme. Especially in the summertime, when fresh tomatoes are bursting from the vines. I wait all year for that first crop of locally-grown tomatoes to start arriving at the Farmer’s Markets. But even in the depths of winter, I will become so nostalgic for that taste that I will cobble together a BLT from whatever pitiful tomatoes are available, reminding myself:  summer is coming!

Quick Tip:  As with most things you cook, there is a trick for cooking the perfect bacon.  Take a cold pan and lay out your bacon slices. Now add just enough water to completely cover the bottom of the pan, but not so much as to cover the bacon or to set the bacon swimming in it. Cook it over medium-high heat just until all of the water evaporates. This renders the fat from the bacon and keeps it from splattering all over you. Then reduce your heat to medium and cook until the bacon is at your desired level of crispiness.
