With just some ground beef and frozen potatoes you’ll be on your way to making one of the best casseroles you’ve ever had.
I just love recipes like these. A twist on an old classic that takes it to a whole new level of delicious. One of my very dearest friends shared this with me one day over a coffee date. I had just finished complaining how I had run out of new supper ideas—and my family was getting sick of the same old same old.
Turns out this was a recipe she had been making for years already and had always thought it was a dish everyone already knew about it. Suffice to say it was completely new to me, and after we parted ways I hurried home to get to work on what I was sure would be a meal that would get rave reviews from even my harshest dinner-time critics.
When it came time to gather round and eat my kids’ eyes literally lit up. They knew they were in for a treat. And even my husband raved about how good it smelled as we got ready to dig in. Everyone cleaned their plates without a fight that night, and they’ve done the same every time I’ve served it since.

Quick Tip: To amp up the cheeseburger flavor even more stir in some ketchup, mustard and chopped pickles to the ground beef after it’s cooked and before adding the other ingredients.
