Up until a few years ago I was a breakfast imposter. I’d tout to my kids the importance of breakfast to fuel you for your day while sipping black coffee before rushing out the door—nary a breakfast food in sight! I was never hungry in the morning and thought that as long as my kids had something in their bellies before we left the house I was in good shape.
But, I’ll tell you, when my work schedule shifted to morning meetings a few days a week I realized really quickly that it’s almost impossible to hide the sounds of a growling stomach in a conference room. After about the fourth meeting filled with awkward glances in my direction I decided I needed to make a change.
I began scouring cookbooks and asking friends for their favorite breakfast recipes, hoping to find a few to keep in regular rotation. And I found a lot of good ones. But this one—let me tell you—this one is fantastic! I’ve made it countless times since discovering the recipe, and it keeps getting better and better. Plus, my kids and husband love it, too!

Quick Tip: This is a great dish to make on a lazy Sunday afternoon and then enjoy throughout the week. Simply bake it up, pop it in the fridge, then slice off and warm up a piece to enjoy every morning.
