You Don’t Have to Go Paleo to Go for This Dish!

When is Spaghetti Not Spaghetti?

Paleo is all the rage these days. It is a food plan where you, basically, only eat foods that would have been available for our Paleolithic ancestors to eat:  meat, fish, eggs, fruits, veggies and tree nuts. No processed foods and no grains or dairy foods. It is actually a pretty healthy way to eat, and many people have lost a lot of weight following it.

But it can be hard to wean yourself from processed grain carbs, like pasta. If you are craving spaghetti and meatballs, for instance, you can certainly make that, using eggs to bind your meatballs and making a tomato sauce and adding in any veggies you might like. But how do you substitute for spaghetti?

Spaghetti squash to the rescue! Yes, I admit that I was skeptical about this odd-seeming veggie. Spaghetti, from a squash? I might never have tried it if a friend hadn’t shared one with me. I looked up how to cook it, and it seemed pretty easy. You’ll need a big, strong knife to cut it in half lengthwise. I used the alternative method of coating the cut sides with a little oil (not Paleo!) and cooking them face down because I didn’t have a big enough pan to use the water method.

Quick Tip:  Make sure you get all of the seeds removed when you are cleaning the squash prior to baking it. If you cook the seeds, they can give the squash a bitter flavor.
