You Can’t Go Wrong With This Unexpected Ingredient!
Everybody loves pasta salad! It comes in so very many different types, that there is a pasta salad out there that is sure to please your taste buds. My only problem with a lot of pasta salads, however, is that they use mayonnaise as the binding ingredient – the sauce – that holds the whole thing together. Then, of course, there are those that use vinegar, or sour cream.
But Chelsea is bringing us something brand-spanking new with her colorful and tantalizingly flavorful Tex-Mex Pasta Salad recipe. It is brimming with a lot of the Mexican foods that you are familiar with, such as black beans, corn and avocado, but it also gets a pop of color and flavor from cherry tomatoes and cilantro. But the very best thing about this salad? The homemade (sort of) Catalina dressing. This takes it over the top, in my opinion.
Not only is this pasta salad super-tasty, it is also super-easy. Perfect for hectic weeknights, or those times when you would just like a lighter dinner. Or maybe you don’t feel much like cooking. Even a half-dead person can manage to boil some pasta, and with this great recipe, that is the most time-consuming element, since you don’t really even have to cut up the tomatoes. How’s that for quick, easy and delicious?

Quick Tip: To make your dressing adhere to the pasta better, save about 1 Tbsp. of the water you drain from the pasta. Add it to the dressing when you prepare it.
