I’ve got four kids at home and things can get pretty hectic—especially now that three are in sports almost year round. Between taking them back and forth to practices and helping with homework and encouraging them to do their chores I sometimes feel like I don’t get enough one on one time with each of them.
So a few months ago I made a promise to myself that once a week I would set aside a couple hours with each of my kiddos to do something just the two of us. Sometimes that means just kicking back and watching a movie and other times it means a trip to the park while my husband stays home with the other three. And for my oldest son it almost always means we find ourselves in the kitchen.
He’s always been my best helper around supper time—eager to get his hands dirty any way he can. And together we’ve cooked some really great meals for the rest of the family. He picks up on things really quickly and always has ideas at the ready.
This particular quick and easy dinner was one of his most recent suggestions—and it was unbelievably tasty!
