Good Thing These Are Small—There’s No Way You’re Stopping At Just One
Is there a certain food that reminds you of your childhood? For me that food is meatball subs. I’m not sure why as we never seemed to have them at home, but this delicious, messy sandwich was hands down my dad’s favorite food. Anytime we went out to eat if it was on the menu he would order it.
Some of my favorite memories of just the two of us are of the trips we’d take to our local deli. I’d order the ham and cheese and he’d have the meatball sub and we’d sit in our corner booth and talk about anything and everything over our sandwiches. It was in those moments that I felt most connected to him and so thankful to have such a strong, loving presence in my life.
Shortly after I graduated high shool and left for college I lost my dad, which left me clining to just about anyway to hold onto my memories of him. And, of course, being a major food lover my mind instantly went to meatball subs.
Since we never made them at home I started searching for a recipe to try. And while this one may not be for a traditional meatball sub it instantly caught my eye.
