We’re Still Trying To Figure Out How Something So Simple Can Be This Delicious

I was a bit of a late bloomer when it came to major life events. I started college late, didn’t meet the man who would become my husband until I was 30, didn’t marry him until I was 35 and we only just recently welcomed our first child a few months shy of my 37th birthday. And I’ve got to tell you all that alone time before I met my better half definitely made me develope some quirks.

One of the biggest ones—according to my husband at least—is my affinity of eating breakfast for dinner every chance I get. I’d say when I was single and living on my own I had breakfast for dinner at least three times a week if not more. So it was definitely an adjustment when I realized that most moment don’t feel the need to mix meals quite that often.

And my husband is the complete opposite of me. Before we me he’d never eaten breakfast for dinner—it just wasn’t something he or his family thought to do—so he was rather resistant to the whole idea. Not one to take no for an answer, though, I decided to introduce him to my favorite meal with a dish I knew he wouldn’t be able to resist.
