As an admitted procrastinaor it took me a while to get on the crockpot cooking train. I just found it extremely difficult to get motivated to start a dish in the morning—no matter how much easier it would make things for me. So night after night I’d find myself staring blankly in my fridge as my kids told me they were hungry and my husband asked if we should just order takeout again.

Then one day as I was out to lunch with my sister, complaining—once again—about how our evenings were so hectic when she told me that it was way past the time I get over my crockpot aversion. She told me how she never went a week without using hers at least once and that she rarely has to throw together last minute dinners that left no one satisfied.

So that night I went home, dragged our crock pot out from the pantry, and decided that I was done procrastinating on dinner. In fact, I even declared it to my husband who laughed so hard he had to walk out of the room.
