Your Kids Will Go Nuts For This Delicious Dish

My husband and I are both huge breakfast fans. We eat breakfast for dinner at least once a week (we claim it’s because it so easy but it’s really just because we think breakfast food is the best food!) and are always trying to outdo each other’s breakfast creations. It’s become tradition to spend Sunday mornings at home baking up indulgent breakfasts we’d never have time for during the week.

And as both my husband and I are both very competitive these weekend breakfast shenanigans can get heated. Last Sunday was his turn to cook and he made the most delicious eggs benedict I’ve ever eaten. And then promptly spent the next few days telling me how I’d never be able to top that—the best breakfast crown had been won.

Little did he know I had been saving an idea for a time just like this—a time when he was sure he was the king of breakfast and he needed a little reminder that it was the queen that ruled the breakfast roost. It has pinned it on Pinterest knowing that it had all the elements of his favorite breakfast and couldn’t wait to see the look on his face when I made it.

Quick tip: If you like your apples really soft after chopping into small piece microwave for 1-2 minute until slightly tender—this will ensure they are completely softer after the casserole is done baking.
