Oceans Of This Hearty Soup Wouldn’t Be Enough!
When you try to think of Italian comfort food, chances are good that you are going to call to mind one of the classic pasta dishes. Maybe lasagna or the simple spaghetti and meatballs. You might go for a meat dish, like chicken parmesan. But there’s one that probably won’t come to mind, and that is tortellini.
I believe this is just because of the average person’s unfamiliarity with tortellini, or its exactly-the-same-but-bigger cousin, tortelloni. Those of you who haven’t yet discovered these little pasta pockets are really missing out on something special. These are the dumplings of Italian cuisine, but they are stuffed with meats or cheese, or sometimes both.
Tortellini is made by rolling out VERY thin circles or squares of dough. It is this thinness that makes them so tender and delicate – you can see the filling right through the dough, it is that thin! Basically, the dough is folded over the filling, sealed to itself with a little water and then shaped into a rounded dumpling shape by folding the two corners in and pressing them together to seal them.
Tortellini is one of the most comforting of all Italian comfort foods. With its flavorful fillings or meat or cheeses, it has a stick-to-your-ribs heartiness that is unrivaled among all of the Italian pastas.

Quick Tip: If you were going to make your own tortellini (which you are NOT doing for this recipe) the most important thing to remember is not to overstuff them. If you do, they will burst open in the cooking pot.
