Beef That’s Delicious & Easy On Your Wallet
Thank goodness for slow cookers! Whoever invented them revolutionized the way many of us cook today. Because of the slow cooking process, you can use some of the more inexpensive cuts of meat and still have them turn into delicious, satisfying meals that won’t ruin your budget in the process.
I was really happy to stumble upon Jennifer’s scrumptious recipe for Korean Beef. I have almost forgotten what beef tastes like, because I just can’t afford it. Have you checked the beef prices lately? They are outrageous! I long for the days when I could afford to fix a nice roast every Sunday. But on a retiree’s pension, those Sunday roasts only happen a few times each year, if I’m lucky.
But with my slow cooker and an inexpensive flank steak, sliced thinly, beef is back in my menu rotation again. This recipe has a rich, savory and slightly sweet sauce that tastes like it is right out of an Oriental restaurant. Seriously, it is just that good.
Add the peppers in toward the end of the cooking time (with about 2 hours remaining) if you would like them to hold their shape and color better. Otherwise, they will break down in the cooking process and disappear into the background of the dish.

Quick Tip: Slicing the meat into the required thin strips will be a lot easier if the meat is still partially frozen.
