Must-Read Recipe For Down Home Southern Cooking

I’m a Southern gal, and I confess to having a taste for things on the sweet side. I do draw the line at sweet tea, however, as it’s just not my cup of tea (pun fully intended). Here in the South, cooks put a little sugar in just about everything they cook. It’s definitely an acquired taste!

In fact, if y’all live in the South for more than a minute, you are going to get used to complete strangers calling you “Sugar” and “Honey.” If they don’t know your name, they automatically assume there is some degree of sweetness in your nature, I suppose, this these particular appellations. Nor is it just women that get this treatment, an unknown-to-you man will get that same polite title.

I lived and worked up North for my entire career, and I became accustomed to my food lacking that sweet Southern touch. So when I retired and moved back South again, it came as a shock to me when I tasted sweet Chinese take-out the first time I ordered General Tso’s Chicken here. Gack! What have they done to this savory delight!?

Quick Tip:  If you cannot find Cajun seasoning, you can make your own by stirring together 1 tsp. salt, 1 tsp. garlic powder, 1¼ tsp. paprika, ½ tsp. black pepper, ½ tsp. onion powder, ½ tsp. cayenne pepper, ½ tsp. dried oregano, ½ tsp thyme and ¼ tsp. crushed red pepper flakes, if you want it to have extra “kick.” Store any you do not use in an airtight container or spice jar.
