Don’t Flirt With Greatness – This Is The Real Thing!
I love, love, LOVE Mexican food! I truly could eat it for dinner every night of the week and not get bored with it. So when I saw this amazing salsa verde chicken casserole from Stephanie, I was dying to know how to make it and eager to try it out. I like that it is different from the usual Mexican casserole that has a red chili-type sauce as the base. Instead, this has a salsa verde, or green sauce.
If you love Mexican the way that I do, you are going to want to collect this recipe and keep it handy, because you are going to be making this frequently. It is full of Mexican flavor from cheese, chilies and cumin, so it is very authentic. This is the type of recipe that, once they taste it, all of your friends are going to be asking you to make copies of it for them.
But it has a unique American twist. Did I forget to mention it has Tater Tots!? How more American can you get than those? There is something almost addictive about those little morsels of potato-y goodness. It is impossible to eat just one of them! Now picture them as a basis for this casserole and you will start to understand why this recipe is going to part of your regular menu rotation.

Quick Tip: For those of you that might think it would be too spicy if you use the Pepper Jack cheese, feel free to substitute plain Monterey Jack or Cheddar cheese instead. You could also substitute Greek yogurt for the sour cream, if you prefer.
