Thumbs Up For This Brilliant Recipe!
You know the quickest way to get dinner on the table with a minimum of fuss and bother? I never did, unless it was a soup or a casserole. I have a huge collection of both of those recipes. I especially like the ones for casseroles that I can make ahead and pop in the oven when I get home. Or soups I can make in my crockpot and have a nice dinner waiting for me when I walk in the door.
But there is a new category of recipe that is getting a lot of attention: the one-pot meal. Sometimes these are made in skillets, other times they are made in sauce pans or stockpots. There is even a sub-category of these types of meals made in the pressure cooker.
Yes, that staple gadget of the 1950s housewife’s kitchen is making a strong comeback. This is because people have rediscovered that pressure cooking extracts a huge amount of flavor from whatever ingredients you put in it, and concentrates those flavors back into the food. But they can be a bit scary to operate, so quick, delicious and easy one-pot meals like this one posted by Dee are taking American kitchens by storm.

Quick Tip: Want to save even more time on your hectic weeknights? Every time you chop onions, celery or peppers for a dish, chop a little extra and freeze them. Then whenever you need a little bit of one of these for a recipe, you will have a ready and waiting supply. Replenish it every time you chop.
