Nothing Comes Close To The Taste Of This Simple Comfort Food
I think that every culture on the planet must have some version of this dish. It was transported here in the memories and recipe boxes of the immigrants who came to the US from various shores. It often goes by the name of beef & tomato macaroni soup. Others call it chili. Some call it goulash. Karlynn’s version is simple, hearty fare that can warm your bones on a chilly night. It tastes great as leftovers, too!
Whatever name it goes by, it covers the middle of our country like a comforting blanket. You may not have had a steaming bowl of it since your childhood, as it has fallen out of favor in our health-conscious rush to embrace salads and no-calorie, low-fat this and that in our crazy quest for immortality.
But now there is a resurgence of interest in comfort food, the food of our memories, the food of simpler times. I feel this is caused by the huge amounts of stress people are under, coupled with the personal isolation that technology has forced upon us. We used to take comfort in interacting with each other, one human being to another. Now we take comfort in food. Is it any wonder our obesity rates continue to rise?

Quick Tip: Here’s the fun trick to this. Go ahead and cook everything, except the pasta, all day long in your slow cooker. Let those flavors blend. Cook your macaroni the night before (or earlier that day). Then add it in at the end, when you get home, just long enough to heat it through. Or you can add dry pasta at the end and let it cook for another 30 minutes
