Here is an outstanding recipe from Blair, who is a genius at creating quick and easy dishes. There are days, like today, when I really appreciate having a source for easy, quick and delicious recipes. We all have those days when we rush and rush, yet seem to get nowhere. When everything that possibly could go wrong, does (thanks Murphy, whoever you are!).

So there I am, racing in the door after a doctor’s appointment, flinging my bag and umbrella (oh yes, it was raining, too!) in the general direction of the utility room to dry out. Looking at the clock, I realize I have exactly 30 minutes to cook something for dinner and wolf it down before I have to dash out the door to my weekly Hearts tourney with my gal pals.  All I really want to do is crawl into bed, pull the covers over my head and tell the world to go away.

Just as I am about to call a friend to see if she can sub for me at cards, I remember this recipe. It says it only takes 10 minutes, and I happen to have the 5 ingredients on hand. Okay, settle down and get to work and let’s see if this can really be pulled off in such a short time.

Quick Tip:  Want to cut your prep time for this recipe to ZERO? Get some pre-packaged diced onion from the produce department of your local market, or see if they have diced onion in the frozen foods department. While the meat cooks, steam some frozen broccoli-in-a-bag in the microwave, and while that cools a bit, zap some 90-second instant rice in the microwave, too. By the time the meat is done, your entire meal will be ready.
