Up until recently I had the great fortune of working part time hours. I’d go in to work at 8:00 and be home by 2:00, which gave me plenty of time to pick up the house, start a load of laundry, and then make dinner in time for my husband to come home with the kids from their after school activities. I absolutely loved it!
However, when my current company offered me a full time position in the exact role I’d always dreamed of filling I had to say goodbye to my extra hours in the afternoon. It was too exciting of an offer to pass up.
When I first started I had all these high hopes of still getting home and getting dinner on the table just like always (I’d always loved to cook) but found that getting home at 5:00 just didn’t allow me to make the same kind of meals I was used to making. So I had to try a new strategy.
Crock pot meals that I could set and forget.
Honestly, I probably bust out my crock pot for dinner three days a week. And this recipe is one of my family’s all-time favorites.
