Sometimes You Just Can’t Beat A Quick And Easy Casserole
I spent the bulk of my early twenties travelling around the world and doing odd jobs that helped me connect with dozens of amazing people. In my twenty second year alone I spent in in seven countries. Each and every destination was amazing to see and experience.
And I was fortunate at in between travelling I was able to stay with my parents. They were extremely supportive but also were never afraid to remind be how my older sisters were both already married and had children—something I pretended not to hear on most occasions.
However, that’s a lifestyle that I just couldn’t maintain and slowly but surely I did find myself feeling the tug to settle down, find a partner and start a family. (My mother was so relieved!). Within three years of living and working full time in the town I grew up I had gotten married and had my first child—a beautiful baby girl.
After I had her my mother was a great help to the three of us—especially in the meal department. She brought over meals that are now some of our family favorites, including this one.
