Ditch the Frills and Enjoy a Hearty Dinner Fit for a King
There are some meals that simply take me right back to the scratched table and lace curtains in my childhood home’s dining room. One of those is meatloaf and mashed potatoes. It was an easy, affordable meal that my mother excelled at, and I loved it. Still do. But these days, I also love meals that are easy to cook, don’t dirty up a bunch of dishes, and are even easier to eat.
Enter this loaded potato meatloaf casserole, and I am in heaven. This clever weeknight meal combines the delicious flavor of a loaded baked potato, the classic combo of meatloaf and mashed potatoes, and the easy convenience of a one-pot casserole. Could there be anything more perfect? I’ve made this recipe three times now, and each time it’s been a huge hit. Everyone in the house loves it, I love making it, and the leftovers are just as great. Huge should out to the chef behind This Is Not Diet Food for making a healthy, affordable meal that can easily be whipped up any night of the week. Give this one a try next time you don’t know what’s for dinner; you’ll be glad you did! The only thing you may lack is the instant potatoes, but real mashed potatoes mixed with garlic will also work if you prefer.

Quick tip: This recipe calls for all beef, but I’ve always found a more flavorful meatloaf comes from a mixture of beef and ground pork.
