An Easy Crowd Pleasing Pot Of Chili
Every year our church hosts a chili cookoff. There are categories for overall best, spicest, and most unique. This simple chili is perfect just as it is but it also provides a great base to experiment with. Leave it alone and you’ll easily win the overall best category. Make sure there are plenty of toppings such as: cheese, fritos, sour cream, chives, crackers, and jalapenos. The more the crowd is able to customize the more mouths you will make happy.
To win the spiciest throw in some diced roasted hatch chili peppers. The flavor is amazing. It has a distinct flavor from any other chili and is a crowd pleaser. Fresh is always best but when not available (they only grow in New Mexico) a can of them from the grocery store will work just fine. Just switch out the 3 cans of diced tomatoes with green chilies for diced tomatoes with hatch chilies.
To win the most unique switch out the ground beef or turkey for venison or buffalo. The gaminess of these meats tastes amazing in chili.
For a unique spicy chili swap out the meat for chicken, use white beans, and hatch chilis. Grab all the categories at once!

Quick tip: If using ground turkey, you may need to heat a tablespoon of olive oil beforehand to help cook and brown the turkey, and then add an additional tablespoon of oil to cook the onion.
