Recently I’ve realized that I’m terrible at coming up with new dinner ideas. Like make the same five meals week after week terrible. And it became clear that unless some new supper recipes made their way into the rotation my family would revolt and take away my title of head chef—something I had no intetion of letting happen.
So while out to dinner with a few of my close friends I decided to pick their brains on their favorite delicious yet quick dinner recipes in hopes of upping my dinner time game. As they went around exclaiming their favorite recipes (or fast food restaurants—as one of my friends explained ”It doesnt’ get faster or easier than that.”) I began taking mental notes on ones I wanted to try.
Oddly, enough the one recipe that kept popping up was for quesadillas—apparently they were much more versatile than I had previously imagined! A few of my friends swore by them as their favorite way to put a dinner on the table that looked impressive but was so quick and easy to whip up.
The very next night I set out to try a brand new quesadilla recipe and my family was hooked.

Quick tip: Instead of a grill or quesadilla maker pan fry both sides of the quesadillas in a frying pan with a tablespoon of oil for an extra crispy tortilla.
