I admit that I don’t often share healthy recipes here, in part because I love delicious food! Why does it seem like everything that is tasty is bad for you? That’s not the case with this yummy quinoa bowl by Delightful Mom Food. I know quinoa is kind of the health food buzz word right now, but trust me when I say you want to get to know this grain. It’s tasty, easy to dress up, easy to cook, and packed full of stuff that’s great for your body. This recipe takes “easy” to a whole new level. Literally dump everything into a crockpot and walk away, it’s that simple. Four to six hours later, you have a meal. Start it at breakfast for an easy lunch, or get it going at lunch for a dinner you didn’t even have to make yourself.

The other ingredients in this bowl are equally good for you, and this bowl is vegetarian friendly. Leave off the cheese, or choose a vegan alternative, and you’ve got a vegan friendly bowl as well. This bowl keeps the dish count down as well, something I always appreciate when it’s time to clean up after the dinner is done.
