This Is A Dish You’ll Want For Breakfast, Lunch, And Dinner
I love sweet potatoes and can’t get enough so when I saw the opportunity to have them at breakfast I couldn’t wait to try this out. It is delicious! The creaminess of the potato mixed with egg and bacon is the perfect combination.
The family loves these so much that I’ve started making large batches and freezing them (minus the egg). I pull them out of the freezer the day before and let them defrost in the fridge.
They are extremelly filling and comforting. Fall days are meant for warm potatoes and large breakfasts. It’s the perfect start to a crisp morning. It feels like thanksgiving has come early. A cup of coffee, a good breakfast, and a view out the back window as the sun rises is my favorite way to start the day.
The sweet onion with the garlic gives it a full hearty flavor. It’s packed full of nutriton to start the day off right and leaves you feeling comforted, warm, and ready to tackle whatever the day brings.
I just love this dish!

Quick tip: I suggest doing steps 1-7 the night before. Just pop them out of the fridge, bring to room temp and add the egg before heating back up.
