For The Busy Mom, How To Quickly Prepare This Easy Breakfast Casserole
Weekends are hectic in our household. There is always an extra child, usually a neighbor, in the house and an activity we are rushing off to. So I am always looking for the easiest way to feed a crowd, and keep them full. This casserole is perfect!
It only takes 5 minutes of prep (even less if you purchase the cheese pre-shredded and use pre-sliced ham). Toss all the ingredients in the pan and throw it in the oven. While it bakes it’s off to find the missing soccer kleets, wash a toddler, throw in a load of laundry, and hopefully grab a cup of coffee.
Soon we’re all sitting around the table stuffing our faces with eggs, ham, hashbrowns, and salsa. It’s a great way to start the day and is filling enough to get us through whichever sport’s actiity is on the agenda for the day.
It’s easy clean up as well, especially since with all these extra mouths even the crumbs get picked at. While the kids are still looking for that missing socceer kleet I have time to wash the one casserole dish, start the dishwasher, and wipe off the counters. We’re out the door and don’t suffer a messy sink on our return.

Quick tip: Serve with salsa and sour cream for southwest flare. To really spice it up throw hatch chiles or jalapenos into the casserole.
