Cans of condensed soups should be a kitchen staple in every good cook’s home! Adding condensed soup to casseroles saves so much time and money, and that’s why I fell in love with this Cheesy Creamy Chicken and Rice Casserole.
My sister, Betsy, has a huge family, so casseroles have become her “specialty”. Every time I invite her over for dinner, she has a casserole dish in her hands, and her chicken and rice casserole has always been one of my favorites.
Actually, it is one of my children’s favorites too! So, like any good mommy, I begged and begged my sister to let me have her recipe for this chicken dish, and I finally convinced her to share! I didn’t realize she uses Campbell’s Condensed Cream of Chicken Soup as the base, but it’s such a genius idea!
A few other additional ingredients is all you need to make the casserole, letting you feed everyone at your dinner table for only a few dollars per person! I even made Betsy’s recipe for my church’s pot luck this past weekend, and it was an instant hit.
The cream of chicken soup base makes all the rice stick together in the creamy sauce, the baked chicken stays moist and juicy, and the melted cheese on top is just a ooey, gooey bonus that gets everyone’s mouths watering!
