Vibrant Fall Veggies And Chicken
Jaclyn is rapidly becoming one of my favorite food bloggers, as she continually creates interesting, nutritious and easy-to-prepare dishes, such as this one-pan seasonal treat. She is a woman after my own heart, when she says, “I love dinners where everything is cooked or baked together in one pan.” Not only are these meals easy, but they also practically eliminate the more extensive clean-up chores that result from using multiple pots and pans.
I couldn’t agree with her more. These one-pan meals are quick and easy to pull together, and you can take advantage of whatever you might have on hand. Use the recipe as a guideline for ingredients and proportional amounts. Then let your imagination, your pantry and your refrigerator dictate what gets included. That way, you will never get bored with your food choices, and you will be less tempted to indulge in fast food on busy weeknight.
This particular meal was created to highlight some of the typical fruits and veggies you will find in the produce section of your local market during the fall season: sweet potatoes, Brussels sprouts, apples and shallots. When these fruits and veggies are roasted at a high temperature for just 30 minutes, all of their natural sweetness comes out through the process of caramelization.

Quick Tip: Want to really cut back on the clean-up chore? Line your baking sheet with two payers of heavy foil, which you can just toss out after your meal.
