Wonder Veggie Makes A Strong Comeback!
Mary has really gone and done it now, with her recipe for irresistible potatoes, redolent of the good old days, when people ate bacon and potatoes with gusto and wild abandon. Remember those days? Back before you were expected to live a totally austere and healthy lifestyle, and are shamed and ridiculed if you don’t fit the Barbie-and-Ken mold?
Snap out of it people! We are all here for a good time, not a long time, just as the song says. So enjoy your food. Absorb and experience everything you eat with all of your senses, make food memories and have food celebrations.
I think the fact that we are capable of discerning the differences between different food groups, and that we can put thought and creativity into the foods we prepare for ourselves and our loved ones, is a clear mandate that we were intended to enjoy everything we eat.
Bacon is good for you, in moderation. If you aren’t already doing this, start keeping a jar of bacon drippings and grease. Do you remember your mother or grandmother doing this? I do. Then they would use this grease to season veggies and other foods they cooked.

Quick Tip: Leave the skins on your potatoes! Not only do they taste better, but there are a lot of nutrients in the skins that you lose if you peel them.
