I am a huge fan of my slow cooker. It was my very first “kitchen gadget” purchase when I set up my first apartment back in the 1970s. I still use that same old slow cooker. Yes, it is very basic when compared to the models of today, but as the saying goes, “If it ain’t broke….”

Anybody who has known me for more than a minute is aware of my obsession with Mexican food. So when I saw this insanely simple recipe from Shannon for slow cooker beef fajitas, I was overcome with joy, and gratitude. Two of my favorite things, combined!

Now let’s take a look at those 5 ingredients for a moment. Beef, check. Bell peppers, check. Onions, check. Salsa, check. Seasonings, check. Does anybody see a reason why you couldn’t take this exact same combination of 5 simple ingredients and use it with ANY protein?

My mind is swimming with possibilities. Chicken is a no-brainer, of course. Why not a boneless, skinless turkey breast? You might have to cook it longer, due to the thickness, but it would work. Boneless pork short ribs? Oh yeah! Shrimp? Bring ‘em on! I would even make this with tofu that I pre-baked to give it firmer texture, for my vegetarian friends!

Quick Tip:   Although many slow cooker recipes advocate layering your ingredients and only stirring them right before serving, this has never made any real sense to me. Just how are those ingredients going to mingle, letting their flavors meld into a delectable end product if they just sit there on top of each other? I think you should give your ingredients a good stir before you set it and walk away from your slow cooker. This gives me the most consistently good results.
