Everyone Who Makes This Dish Loves It
I’m fortunate to have a pretty strong immune system. Growing up I was rarely sick—even when my siblings would find themselves stuck in bed with the cold or flu. I even went through high school without a single sick day.
However, it appears that strong immune systems might just skip a generation because it seems that all three of my kids have at least one bad bout of the flu or a nasty cold every winter. That means I’ve been given plenty of opportunities to perfect my feel better food that I prepare for them once they’re on the mend.
Most recently my youngest daughter found herself with a cold that just knocked her right out, so we spent a few days home together while she rested. On the third day home I had just tucked her in on the couch and was about to put on her favorite movie when she told me she was hungry. After being pretty much out of it for days she was finally feeling a little better!
To celebrate I knew I had to make her something delicious but that wouldn’t be too much too soon. And this soup fit the bill perfectly.

Quick tip: To make this even healthier omit the heavy cream or half and half.
