You’ve never seen a chocolate cake recipe quite like this.
When I first heard of this cake I found myself shaking my head and saying it couldn’t possibly work. That a recipe this easy couldn’t actually taste good. I mean, it’s missing some key cake ingredients (No eggs? That’s cake blasphemy!), so I think I had a right to be skeptical.
But, boy, am I SO glad I let my friend (the discoverer of this Wacky Cake Recipe) talk me into giving it a shot. It was hands down one of the BEST chocolate cakes to ever come out of my oven. And as a girl with a serious love for all things chocolate that’s really saying something.
And once you learn the inspiration behind the recipe everything about it makes perfect sense. During the great depression baking staples like eggs, butter and milk became scarce and expensive, meaning bakers back then had to get creative to still make sweet treats. This cake is one of the recipes they came up with that is still impressing people today.
I served this for dessert after a Sunday dinner with my husband and in-laws and no one guessed that it was missing any typical cake ingredients. My father-in-law even went back for a second slice, which almost never happens!

Quick tip: Serve this with just a dusting of powder sugar and it makes the perfect birthday cake for someone with a dairy allergy!
