Cozy casseroles have always been a staple at my family’s supper table. I remember everyone crowding around trying to get to their favorites before there was only crumbs left behind—and with a family as big as mine that’s not an exaggeration. We weren’t shy when it came to digging into whatever was on the menu.
We had plenty of beloved dishes (my grandmother could out cook just about anybody and she passed those skills to my mom) but for some reason you just couldn’t beat a piping hot casserole straight out of the oven. There’s just something about their hearty ingredients and simple preparation that just take you back to a simpler time.
And so anytime one of us stumbles on a good casserole recipe it’s mandatory that we spread it around—no secret recipes in our family! So when one of my aunt’s brought this dish over for Thanksgiving a few years back she had everyone begging her to share the recipe. It’s now become a staple at nearly all our family gatherings, and we wouldn’t have it any other way.
