Some families have a weekly family dinner. My family? We have a monthly brunch. The third Sunday of every month we all gather at my parents’ house for some good food and family time. It’s been a tradition since before I was born, and I look forward to it every month.
My parents always make a few items that are always on the menu—heaps of scrambled eggs, stacks of toast, and a pile of bacon—and it’s up to the rest of us to supply the extras. A lot of times I’m in charge of supplying the fresh fruit to offset the other rich dishes. But a few months ago I begged my sister to take over fruit duty for one day, so I could try this casserole.
Fortunately, she obliged, and while she was stuck washing and chopping her fresh fruit haul, I had this dish prepped and ready to bake in less than 15 minutes. And when I brought it to my parents’ house and popped it in the oven the whole house smelled like a bakery—it was divine! Right then even before tasting it I knew we were all in for a treat.

Quick tip: Prep this casserole the night before then pop it in the fridge. Then the next morning just take it out and bake it up.
