Not Exactly Chicago-Style, But Close Enough!

Pizza is Like Sex, It’s all Good!

Here’s the thing. I’ve never met a pizza that I didn’t like. Some more than others, obviously. But just like sex, with pizza it’s all good! I’ve even tried anchovies on pizza, and once I got my brain past the thought of them, they were actually pretty tasty, I have to admit.

I’ve tried all manner of strange combinations, too! I’ve eaten pizza with pineapple and Canadian bacon, pizza with spinach, tomatoes and mushrooms on an Alfredo sauce, buffalo chicken with bacon pizza, and even pizza with shrimp, crab and lobster.

But through all the years, and all of the pizzas I’ve tried in the many places where I’ve lived or traveled, I always come back to these two favorite combinations:  simple pepperoni and mushroom (which is my cook-at-home go-to pizza) and sausage, mushroom and onion (which was my staple all through college and my young adult years out on my own, and is still what I order out). These two combinations are my pizza comfort food.

Although I generally prefer a thin, crispy crust on my pizza, occasionally I will indulge in one of these luscious doughy wonders. Now that I have found this recipe, I will be able to fix a deep dish pizza any time the mood strikes.

Quick Tip:  I don’t know about you, but all of the pizza sauce I find seems to be either bland and tasteless or too heavy on the oregano. So I use my favorite thick and chunky pasta sauces. The only difference between the two types of sauce is that pizza sauce is usually uncooked, with the flavor dependent, largely, upon the tomatoes used. Pasta sauce has been cooked down with onions and herbs and is more watery.
