Better Than Grandma Used to Make
I remember traveling hundreds of miles to visit my grandparents and great-grandparents during the holidays. There was always a huge feast, spreading throughout the dining room and kitchen, as far as the eye could see. The smells were enough to drive the budding foodie in me absolutely wild!
The only trouble was, neither my mother nor my grandmother could cook worth a tinker’s damn. Thank goodness I had my great-grandmother, who took me under her wing and taught me the basics of cooking. I’ve even inherited some of her treasured recipes.
That is why this recipe is better than the casserole my grandmother used to make. Hers was dry to the point you could almost crack a tooth eating it. This recipe produces a creamy, custardy corn casserole so delicious that it will become an heirloom recipe in your family.
The caramelization in the corners and around the edges is especially tasty. As recipe creator Tara says, “Seriously, my kids have been known to scrape the dish completely clean, getting every last bit of caramelized goodness from the corners.” Try it out at your next family gathering and judge the results by the fight over who gets to scrape the baking dish clean.

Quick Tip: A glass baking dish is recommended, as it helps create the caramelization that enhances the flavor of this recipe.
