Don’t want to slice the raw beef, chicken, turkey or pork to use in this recipe? Cook the protein in whole pieces and then shred it after cooking. You can do this right in your slow cooker. There’s no need to take the meat out, shred it and return it to the slow cooker.
Simply use your hand mixer! I know, it sounds a bit crazy, but once you try it, you will be a convert for life. No more of that arm-breaking, mess-making and time-consuming shredding of meat with two forks! Just attach your regular beaters and turn your mixer on medium-low. Watch it shred that meat in mere minutes!
INGREDIENTS
2 lbs. beef, sliced
1-2 bell peppers, sliced
1 onion, sliced
20 ounces salsa
2 Tbsp. fajita seasoning
INSTRUCTIONS
Add salsa to bottom of the slow cooker.
Add beef, onion, bell pepper and fajita seasoning. Stir to mix well.
Cook LOW 6-8 hour or HIGH 3-4.

Quick Tip: Those little packets of fajita and taco seasoning contain about 2 Tbsp. of seasoning, but who knows what else is lurking in there! Here’s a recipe for making your own fajita seasoning: 1 tsp chili powder, ½ tsp cumin, ¼ tsp black pepper, ¼ tsp salt, 1/8 tsp oregano, 1/8 tsp paprika, 1/8 tsp garlic powder, 1/8 tsp onion powder and 1/8 tsp crushed red pepper flakes. Mix well and use the entire amount in making this recipe.
