You’ll Never Need Another Recipe For This Summer Classic

I think there are probably very few people out there who haven’t had classic cold pasta salad—or as my family called it Macaroni Salad (because we used macaroni pasta—we were a very creative bunch!). And that means most people also probably have an opinion on just what makes this tasty side so delicious.

For some people it’s a heaping helping of hard boiled eggs. For others it’s just the right balance between tangy and sweet in the sauce. And for my family it was always making sure it was served perfectly chilled—I have many memories of my grandmother (who was considered the queen of Macaroni Salad) hovering around the table and waiting to bring the big bowl back to the fridge for another chill.

It made it the perfect dish to serve on hot summer nights and one my family always looked forward to. Unfortunately, after my grandma passed away we lost track of the recipe. She was famed for cooking everything from memory and intuition and never wrote this one down.

So I set out for a new recipe to rival the one of my childhood, and let me tell you this one does not disappoint!
