You’ll Never Want To Use a Box Mix Again!
Growing up I don’t think my mom every made us a birthday cake that wasn’t from a box mix. And don’t get me wrong—she was an excellent cook and baker, but she just loved the convenience of using a cake mix. And my siblings and I certainly wasn’t complaining. After all it was still cake!
And I’ll be the first to admit that I picked up my mom’s boxed mix loving ways. I keep a stash of pancake mix on hand for Saturday morning breakfasts and always have a stash of brownie mix on hand for when a craving hits. To me sometimes the extra effort and worry over whether or not a baked good will turn out just isn’t worth it.
But for some recipes? It so is.
My son recently had his 10th birthday and he’s been a lifelong lover of funfetti cake straight from the box. But I was determined to ring in his first decade of life with a little more fanfare. So I searched for a recipe that looked both insanely delicious and manageable for someone who’s still an amateur cake baker and this one did not disappoint.

Quick tip: To test for doneness insert a toothpick into the center of the cake. If it comes out clean the cake is done.
