One Slice Of This Cake Is Never Enough

When I found out that best my friend from college (we lived together all four years) was having her first baby I was over the moon excited for her. I immediately began envisioning nights spent babysitting the little one while mom and dad went on date nights, being called “Auntie Cass” and all the cute clothes I would get to buy him or her.

So when her sisters asked me to help plan her a surprise baby shower and provide the desserts let’s just say I didn’t hesitate to say yes. I was thrilled. We started exchanging ideas and things we thought she might like. We knew it would be filled with all things girly—she was having a girl and was by far the girliest girl I knew—and that meant lots of pink.

When the weekend of the shower arrived I let her sisters get everything ready at the park we were hosting it at while I began my long to bake list. I tried to get all her favorites—chocolate chip cookies, rice Krispy treats, and lemon bars—but also wanted a pink dessert to really round out the shower theme.

And this cake fit the bill perfectly!

Quick tip: To ensure the cake doesn’t stick grease the pan with shortening or butter and then dust with flour.
