Fruit? In a Soup, You Say! What’s the World Coming To?

I know, I know! Soup is the very last thing you are thinking of having for dinner on a hot summer’s night. But what if the soup was cool and refreshing, a little bit sweet and a little bit spicy? Would that change your mind?

What if it involved absolutely zero cooking? That’s right, not the least little amount of heat added to an already hot environment. You’re curious now, aren’t you?

Gazpacho is a very popular type of soup dish that originated in Spain. Served chilled, gazpacho is made using raw vegetables as the base, usually tomatoes. But as gazpacho’s popularity grows, people are branching out and creating recipes with unique combinations of fruits and veggies.

It is often served from a glass that you sip, instead of being spooned from a bowl, and has even become a popular basis for summer drinks in trendy bars. Gazpacho not only will cool you, but also can energize you because of the jolt of vitamins rapidly hitting your system in juice form.

So at your next summer gathering of family and friends, serve up some gazpacho in glasses as guests mingle in your backyard or by the pool. You will be the talk of the neighborhood!

Quick Tip:  For a little extra zesty flavor, add crushed red pepper flakes, or Sriracha sauce, to taste.
