This recipe is one of those that just instantly transports you to your happy place. It’s one you bust out when you truly feel like indulging in a bowl of comfort food and don’t care who knows it. I’m a firm believer that life is too short to say no to good food (even if my skinny jeans might disagree with me on that).

And growing up in my family nothing said comfort food like a big bowl of my Nana’s potato salad. It was a no fuss recipe with all your standard ingredients—perfectly cooked potatoes, hard boiled eggs, lots of mayo and a touch of mustard, and just a hint of a peppery kick.

However, as I’ve gotten older I’ve come to realize that I am just not a huge fan of hard boiled eggs. And now whenever I eat traditional potato salad I find myself spending more time searching for and picking out the eggs than I do actually enjoying the dish. So when I saw this recipe for a twist on potato salad I was all in to try—maybe I’d just stumbled upon a new favorite dish! And let me tell you—it didn’t disappoint.
