This Soup Tastes Just Like You’re Eating A Plate Of Enchiladas
If you’ve ever gone to a Tex Mex or Mexican restaurant, you’ve probably had chicken tortilla soup before. It’s a really popular style of soup, and I finally have the perfect copycat recipe: Enchilada Soup! Now, I can make the southwest inspired soup at home without having to go out for it!
This soup is creamy and tastes very strongly of tomato and Mexican spices. The addition of corn and celery keeps all the flavors bright and fresh. Plus, each bowl is loaded with nutrients from all the ingredients.
My kids love a hot bowl of Enchilada Soup on sick days, rainy days, or even cold, winter months. If the soup is too spicy for your liking, you can replace the Mexican chili powder with cumin; you’ll still get the smoky flavor without the spiciness.
This Enchilada Soup recipe is very filling too, thanks to the juicy chicken that’s added in. It really does taste like you’re eating at a Mexican restaurant! Even my husband is a huge fan – he’s begged me on several occasions to make this soup for him.
There’s something healing and comforting about a big bowl of hot soup. Plus, who wouldn’t love a big sprinkle of melted cheddar cheese over it all?
