This Dish Is Sure To Please Even The Pickiest Of Eaters
I think I’m in the minority when I say I can take or leave casseroles. I know, I know—it’s weird. I think it’s because growing up my mom’s idea of a casserole was piling noodles, cream of something soups and a pile of ground beef into a pan. They were lacking in any real flavor and got old fast. (Sorry, Mom!)
So I’ve been pretty reluctant to get into the whole casserole game for my family. In fact I could probably count on one hand the number of different recipes I’ve tried and actually even considered making again. However, my mind was totally changed after I had my youngest child.
My recovery was slower than with my first two kids due to some complications, which meant I wasn’t immediately up and back at the dinner game right after he was born. Pair that with a husband who goes out of town for work for days and sometimes weeks at a time, and I was enlisting the help of just about anyone who was willing to fill the dinner time void.
And one night my dear mother brought over a dish that changed my views on casseroles forever (in a good way).

Quick tip: You can switch up the pizza toppings to your liking. Green pepper and onions make a great veggie addition—just sauté them first to soften them up.
