Bacon Makes Everything Better But This Recipe Is Just Over The Top Delicious
Let me just start out by saying that I’m a big believe in that more isn’t always better—there can be too much of a good thing. But when it comes to this recipe? Throw that right out the window!
I remember the first time I was served this dish by my father-in-law (one of the best cooks you’ll ever meet!). I immediately thought ‘isn’t that a bit much?’ as I watched him slice into the perfectly cooked pork. As people started filling up their plates I could tell I was in the minority. All I could here were exclamations of how good it was and how it was the best thing they’ve ever tasted.
Not being one to miss out on good food when it’s right in front of me I hesitantly grabbed a slice—and couldn’t believe my taste buds! My father-in-law gave me an “I told you so” glance, as I continued to dig into my first (and then second and third) slices. I was in heaven.
Since that day this recipe has become one of my absolute favorite meals to make for my family and to serve to guests. Everyone loves it!

Quick tip: For the best flavor let this set in the marinade for a full 24 hours—perfect to start on a Saturday and then serve for Sunday supper.
