Now this is one really flavorful salad! Your mouth won’t know whether to shut up and eat or jump up and shout. Yes, it’s just THAT good!
What a glorious riot of flavors! The corn is sweet, but it becomes transformed with the addition of herbs and spices. Then you add a little bit of cheese and a splash of citrus, making it into a dish you will start to crave. It is a good thing that summer doesn’t last forever. It allows you time to anticipate having this salad next year.
You say you’ve had trouble slicing corn off the cob before, with the kernels bouncing all over your kitchen and making a big mess? Don’t let that stop you from making this unique salad. Here’s a better way: Take a tube or Bundt pan, and stand the ear of corn straight up in the center of the pan on the hollow center piece. Now when you slice the kernels off, they will fall right into the circle of the pan below. Wasn’t that easy?

Quick Tip: Don’t buy your sweet corn on the cob until the day you plan to cook it and eat it. Once it has been picked, the natural sugars in the corn quickly start converting to starches, which can make the corn have a tough, chewy or gummy texture. Yuck!

This is definitely a recipe I will make as soon as the corn (in our garden Is. Possibly buy corn from a grocery store. Sounds delicious!!!
