This Casserole is Not Your Typical Mexican Food

Quick Tip: Oops! Forgot to thaw the spinach? No worries, just use the defrost or thaw setting on your microwave and process it in minute-long increments until thawed. Once it is thawed, whether you used the microwave or did it over time, press the spinach into a colander or squeeze it with your hands and then blot it with a paper towel. You want to remove as much liquid as possible or your finished casserole will be soupy.
