I will be the first to admit that some days I just don’t really want to try in the kitchen. I want to make whatever is quickest and easiest and then be on my way. I’m not ashamed to admit that frozen pizzas are often on my dinner menu and that I consider grilled cheese and canned tomato soup a favorite dish of mine.

But then there are the days I feel like getting my hands dirty and preparing a meal that just absolutely blows anything quick and easy out of the water. This is one of those meals.

The first time I had it was for a dinner at my aunt’s house. It was our annual ladies’ night where all the women in our family gather together to spend time together while enjoying good food and better conversation. My aunt always makes the main dish and the rest of us bring sides and dessert to round out the meal.

On this particular evening my aunt made this delicious beef stew, and I could not believe just how good it was. I’ll admit I went back for seconds (and then thirds) before begging her to share the recipe.

Quick tip: Bottom round roasts are the best for this stew but top round, shoulder or chuck will work well, too.
